Chef’s Tiramisú

INGREDIENTSB

100g egg yolk
120g sugar
1kg mascarpone creme
250g double cream 3 espresso cups or shots of coffee
25-30 savoiardi biscuits (Ladyfinger biscuits)
Cacao powder
A baking dish (around 30cm long and 10cm wide)

INSTRUCTIONS

1. In a bowl, whisk the eggs and the sugar until they become creamy.
2. Add the mascarpone and gently mix it all together with a spoon.
3. In a separate bowl, semi-whisk the cream until it has a thicker texture (but not too thick!).
4. Add the creme slowly and gently to the mascarpone mix with a spoon.
5. In a baking dish, add a thin layer of the mascarpone mix to the bottom of it.
6. Then, one-by-one, dip the ladyfinger biscuits into the espresso coffee and add them in your dish. Dip both sides of the biscuits for only 1 second, otherwise, they will get too soggy.
7. Add a 1cm layer of mascarpone and a sprinkle of cocoa powder on top of it.
8. Repeat by adding a second layer of ladyfingers that have been dipped in coffee, followed by 1cm of mascarpone mix and a layer of cocoa powder on top.
9. Cover the dish in cling film and cool it in the fridge for about an hour.
