For José Luiz Diniz the great reference and source of inspiration as Chef remain on his grandmother's kitchen memories. True to what traditional cuisine has the best, to the knowledge acquired over centuries, and to the recipes of other times, he has creativity in the kitchen as a daily challenge, applying modern and innovative techniques, but always with the highest respect for the products, and for the original integrity and flavors of all the foods with which he works.

With a career developed in the best hotels in Portugal, including several 5-star hotels such as the Tivoli Seteais Hotel, the Farol Design Hotel, the Miragem Hotel, the Costa da Caparica Hotel, the Quinta da Marinha Hotel and the Sheraton Cascais Resort, it was at the Marriott Lisbon, the place he still considers as his greatest school, he took the first steps on professional kitchens.

His passage in Angola over 5 years, where he opened and supervised 5 luxury restaurants, as well as trained and educated close to 100 local cooks, was one of the most important moments of his life. As it was the moment he became a grandfather, a love different from the others.

Love and passion won’t lack on José Luiz Diniz gastronomic proposals, a Chef for whom cooking is a mean of sharing his memories, exploring classics, and of incessantly seeking the unattainable perfection, similar to other Chefs who he sees as a model, such as Gordon Ramsay, Éric Ripert and Masaharu Morimoto. And of course, his grandmother.

O chef foi muito cauteloso em deixar o jantar decorrer ao ritmo que os convidados desejaram, sem puxar a atenção para si ou para os pratos, que eram excelentes.

O Chef José Luiz apresentou-nos um menu simples (sopa, risotto e pudim) com uma execução absolutamente exemplar. Foi um manjar dos deuses!
